Cattails are one of the extremely valuable survival foods: providing food and useful materials during all four seasons and in most environments. We will start early, 8:30 a.m., at the Fellowship with a fresh, hot-from-the-oven apple-oatmeal-cattail muffin (lo-gluten). I'll show you cattails in several stages of growth. Then, we'll carpool to a cattail stand (location to be determined). Spend about an hour foraging for the cattail pollen, then head back to the Fellowship, where we'll seive the pollen into a flour state. You can cut the flour in half in any recipe and substitute the cattail pollen, boosting the nutrition and protein, and giving the final baked good a gorgeous yellow-green color. Bring good, hardy scissors or knife, a bag to put the tails in (I usually use a sturdy shopping bag), and a sieve/colander. These presentations are given to panels comprised of staff and outside visitors. This is your chance to serve on a panel and give meaningful feedback to several of the Eagle Rock students. As one of this auction item’s winners, you should plan on leaving for Estes Park on Sunday April 8th in the afternoon. We'll carpool if that works for people.
