"World Atlas of Cheese" - 1976. Hundreds of cheeses from six continents, with histories, lore and pictures.
"The Complete Kitchen Guide" - 1968. Utensils, foodstuffs, weights, measurements, cooking times, freezing, herbs and spices, etc. Lots of good info and line drawings.
"The Complete Book of Mexican Cooking" - Elisabeth Lambert Ortiz, 1965. A classic with 340 recipes.
