Raise the Paddle This year's Raise the Paddle is for our Sanctuary. What better way to show how we feel about OUUC than taking care of the space that nurtures our souls and hearts?

This room has served our needs well over the years. It has provided us opportunities for both calm meditation and joyful celebration. It has held us as we connect with each other. It has shielded us from the weather, though it took on some ceiling stains; we have grown and modernized, and have hung cables from its ceilings; it has weathered the years with us, and the walls have faded and peeled; the carpets show the effects of many a coffee spill and muddy shoe.

We can’t rebuild and expand to our hearts' content at this time, but by adding some new paint and new carpets, and by concealing some cables, we can bring the Sanctuary back to its former glory and dignity. Together we can walk into the Sanctuary with pride, knowing that we have taken care of this special place that is the spiritual home of our community.

Hope Island Adventure Hope Island State Park is a 106-acre marine park reachable only by boat. The Island is covered with old-growth forest and saltwater marshes. Two miles of hiking trails and a 1.5 mile long beach trail attract boaters to this small, quiet island.

We will gather at Boston Harbor Marina and sail or motor (depending on weather) 2-3 hours, dinghying to shore for a hike and exploration of the park, pioneer farm and old orchards.
A mid-afternoon snack will be provided as well as refreshments.

2nd Annual Shelton Homebrew Boot Camp Join Brewmaster Brian Walsh at his stainless steel brewery in Shelton to learn how to brew a 15 gallon all-grain batch of “Jack’s Nostalgia”, his take on a pre-Prohibition ale. On auction night each winning bidder will receive a copy of the recipe to be used, a growler and the esteemed title of Assistant Brewer.

Assistant Brewers will be guided through the major stages of the brewing cycle: Grain Bill; Water Prep; Milling; Mash-in; Yeast Prep; Sparging; Boiling; Hop Additions; Chilling; Yeast Pitching; Fermentation; Conditioning; Yeast Harvesting; Kegging; Sampling and Clean-up. This entire process usually takes about 6 weeks: but through the magic of compressed time as pioneered by Julia Child, we can do it in one day. Yes, I said all in one day!

On Boot Camp day, we will work with 3 different batches of the same beer. The brew team will begin batch #3 and take it to the Fermentation stage; batch #2 will have been prepared a few weeks earlier and have completed the Fermentation stage, and we will use it for Conditioning and Yeast Harvesting. Batch #1 will also have been prepared several weeks earlier and be used to demonstrate Kegging & Sampling.

A bonus for this Boot Camp will be SAUERKRAUT. During the Boiling stage, the Brewmaster will demonstrate Sauerkraut making using the world famous Ron Sanderson lactic acid methodology.

Boot Camp starts at 9:30 and we will be finished around 4:00. Lunch will be served, probably during the Mash-in protein/starch conversion rests. (I’m thinking pub food here). At the end of the day, each Assistant Brewer will take home a growler of beer drawn from batch #1. Six (6) weeks later they will receive a quart of beautiful Sauerkraut.

Assistant Brewers must wear boots and promise to be very safety conscious; we will be working with fire, hot water and heavy buckets. Boot Camp day will be in late August/Early September, rain or shine. Assistant Brewers are encouraged to participate in the selection of a date suitable to all involved. Questions? The successful bidders will assemble their choices for ingredients for appetizers, salad, main course, and sides and, on the morning of July 19, 2015, email those to Joe and Jeff. They will shop for the ingredients, concoct recipes using those ingredients and prepare and serve dinner at one of their homes that evening at 5:30 p.m. Three caveats: (1) the selected ingredients must be readily available in Thurston County, (2) they must be ingredients, the consumption of which was legal before December 9, 2012 (you get the point here) and (3) the chefs may also use standard staples (flour, sugar, milk, eggs, etc.) and spices.
