Fabulous French Market soup or Gumbo Ya-Ya |

Alan has been making French Market soup and Gumbo Ya-Ya for our parties for many years and has modified and enhanced the recipes to perfection! His French Market soup is hearty and chock full of beans, vegetables, ham hocks, chicken, and pork andouille sausage in a tomato and chicken broth.
The Gumbo Ya-Ya (pictured) is Emeril Lagasse’s recipe, starting with a whole chicken for the stock and a dark, rich roux that requires much time and patience to make. It is full of shredded chicken and pork andouille sausage. It has an authentic and unique flavor, and we like to serve it with white rice. “Gumbo Ya-Ya” loosely translates to “everybody talking at once” and refers to the mélange of people – French, Spanish, Indian, Acadian and African American - who melded together in Louisiana’s bayou country creating a unique community.
Alan will make your choice of soup that is enough to serve 10-12 people. French Market soup is gluten free, and the gumbo can also be made gluten-free if you prefer. Please allow two weeks’ notice. |
